I wanted to know if it’s possible to use the software to simulate just a wing without the car body, wheels, or other components. Could you also provide some guidance on how I can set up this type of simulation?

It is absolutely possible.
You can follow this tutorial and exchange the aircraft with your wing:

When using a template for cars, I assume MFlow will complain about missing wheels and so on.
So, if your intention is to run close to the ground to study ground effect or something similar, please let me know and I will have a closer look.
